Pork and bean stew with root veg and spinach. Side of eba (cassava mash). The stew is pretty good by my standards – probably the half bottle of white wine I added.
But the real magic here is the eba, which is a joy that has been denied to me for twenty-four years. Naturally quite a salty, savoury taste that’s hard to compare. Works great with any stew, as Nigerians from the age of nought will tell you. Buy it as a flour and add water – perfect store cupboard staple. Makes a change from bread and potatoes too, which is only going to get you eating more vegetables.
